BLENDER PANCAKES

So easy and nutritious! Jones family favorite   

1 1/4 cup water
1 cup wheat berries
1 egg
2 tbsp oil
1 tbsp honey or maple syrup
1/2 tsp salt
1 tbsp baking powder

Combine water and wheat in a blender on high for 3 minutes. Add egg, oil, honey, and salt and blend 20 seconds. Add baking powder and pulse 3 times, just enough to mix. Mixture should foam up and get very light. Cook as usual.

"I bought this cookbook over a year ago when I was trying to find a way to use more variety while preparing healthier foods for my family. I use it almost daily--I love how the foods are categorized by season, as we always try to use the freshest things we can. There are so many recipes for making things from scratch that I've always wondered how to make--like graham crackers and corn tortillas. And one of the most useful tools is the grain index at the beginning, telling about all the different grains, and how to use them, cooked or raw. I have discovered short grain brown rice, millet, and quinoa through this cookbook. I highly recommend this book to anyone looking for a healthier or more flavorful life."
